Back of House

K1 — Fryer Lead (Tonkatsu Station)

Responsibilities

  • - Read tickets and manage frying priorities (confirm with K2 as needed)
  • - Bread, fry, time, and control oil temperature/level for consistent results
  • - Move product to the draining rack (handoff point)

Requirements

  • - Strong control of color, doneness, and oil management
  • - Calm under rush; disciplined and clean
  • - Consistency-first mindset

K2 — Fryer Support + Plating (Main Dish Finishing)

Responsibilities

  • - Build a holding queue from draining rack to heat-lamp station
  • - Rest 4–5 minutes, then cut/slice and plate main dishes
  • - Insert hot-pot rice dishes based on priority (only when mains are not stacking)
  • - Coordinate tray flow and pacing with K3

Requirements

  • - Speed with precision (cutting/plating)
  • - Strong sequencing and communication
  • - High standards for presentation and timing

K3 — Assembler + Drinks

Responsibilities

  • - Assemble trays: rice, miso soup, curry, sides, set components
  • - Notify FOH for pickup at the pass
  • - Prepare drinks: espresso-based fruit coffee + pre-made bases
  • - During rush, shift canned/juice drinks to support roles

Requirements

  • - Efficient assembly and multitasking
  • - Clean workflow, clear communication
  • - Comfortable with drink station routines

K4 — Dish + Utility + Prep Support

Responsibilities

  • - Run dishwashing end-to-end and keep dishware stocked
  • - Handle garbage, floor cleanup, and station support
  • - Refill panko crumbs (crumb machine + transfer to fryer station)
  • - During rush, support drinks (non-extraction steps: cups/ice/labels/canned drinks)

Requirements

  • - Fast and organized; strong hygiene habits
  • - Willing to support wherever needed
  • - Reliable and physically active

Front of House

F1 — FOH Lead (Partner)

Responsibilities

  • - Take orders, cashier, manage table turns, handle guest concerns
  • - Coordinate peak-hour dispatch: running, clearing, calling for extra help

Requirements

  • - Strong situational awareness and leadership
  • - Calm guest communication
  • - Clear decision-making under pressure

F2 — Server / Runner

Responsibilities

  • - Deliver food, refill water, serve salad, handle simple guest needs
  • - Clear and wipe tables; restock napkins and utensils

Requirements

  • - Friendly, efficient, detail-oriented
  • - Good pace and teamwork
  • - Clean and organized habits

F3 — Peak-hour Busser / Runner (Part-time)

Responsibilities

  • - Clear tables, wipe surfaces, refill water, run food, restock utensils
  • - Activated during weekend dinner rush or heavy order spikes

Requirements

  • - Quick hands, good stamina
  • - Works well in a fast-moving team
  • - Available for short peak shifts (2–3 hours)
